A top-notch fine dining pastry chef, by training and experience, Erin heads up our beer production from start to finish. Her skills for high end recipe development have translated seamlessly to our beers. Attention to detail and a strive for perfection are seen throughout all her offerings. Erin loves classic styles but loves to brew them all. 

Love our food? This is your guy behind the scenes makin' it happen. George comes to us with over a decade of food experience doing everything from fine dining to upscale casual. George is as passionate about food innovation as he is with business which is the perfect fit. Spending much of his life in Florida, George enjoys the coastal outdoors as well as the Tampa Bay Buccaneers. 

Meet Cory, our bar manager, cocktail creator, and resident multitasker extraordinaire. After a brief hiatus, she’s back behind the bar shaking things up—literally and figuratively. When she’s not crafting inventive cocktails, Cory is likely stitching up something fabulous as a seamstress or orchestrating our photo shoots like a true director. She brings style, creativity, and just the right splash of flair—sometimes in the form of a perfectly placed purple streak in her hair.

A Georgia College & State grad with a degree in Mass communication, Sophie has been a part of the Hop Atomica team since 2024. As a big craft beer fan, she loves highlighting our ever changing menu, planning fun events, and connecting us with the community through social media. When Sophie isn't here, you can usually find her running, reading, or hangin' with her husband and their dog Weezy.
